The Story so far

From the Greek Island of Lesvos (famous for the best ouzo in Greece and its love of fishing) a young, determined 14 year old boy, who we now know as Uncle Steve, ran away from home to join friends on a fishing boat through the Aegean Sea. Over the years, his expedition took him from the fishing ports of the sub continent to the ports in Cape Town, South Africa, satisfying his love of the sea and fish. He returned to Greece years later to marry his love Poly, before migrating to Melbourne in 1972. As a migrant Steve gained employment as a factory worker before an opportunity surfaced to open his first Fish and Chip Shop on Fitzroy St, St Kilda in the late 70's.

And so his career began... Steve's day starts with him sitting on a milk crate in the rear of the shop peeling spuds by hand to then slice and batter his famous crispy potato cakes. There are machines to do that these days but he prefers to do it by hand "the machine no good... I want to see every potato" (must be said with strong Greek accent). When he began his career, everything was done by hand, minimum chips were 30 cents and there was no such thing as a chilli mussel skewer in a fish and chip shop!

Now a little longer in the tooth, Steve's experience shows and his eye for detail is exemplary and as a traditional Greek should, he occasionally sneaks in a shot of ouzo in his lunch break to help him get through the evening rush.

With the support of his younger comrades in arms Uncle Steve is now transforming the traditional fish & chip experience into a more modern flavour with healthy alternatives (grilled fish and brown rice - not so traditionally Greek!) and of course the staples including flake (gummy shark of course), burgers and souvlaki.

Proudly presented on the Hook, Line and Sinker menu is a little sentence which sums this experience up nicely "Everyone loves fish & chips, it's a traditional concept that has been around forever, but when it's done well it's better than any Michelin star restaurant meal. It's simple and it works"... Here here.
